Deadly E. Coli Outbreak Causes Illness Across the U.S. – FDA Warns Not to Eat Bagged Spinach

There has been an outbreak of E. coli in multiple states associated with the consumption of bagged spinach. The U.S. Food and Drug Administration (FDA) has issued an alert to consumers. The E.coli O157:H7 causes diarrhea, often with bloody stools.

Although most healthy adults will recover within a week, some people have developed kidney failure called Hemolytic Uremic Syndrome (HUS). This condition is most likely to occur in young children and the elderly, according to the FDA.

I was born in 1950, and when I was going to school there was no such thing as ADD/ADHD. I never even heard the term “hyperactive.” The closest we came was to call someone squirrelly.

A substance called ChREBP (carbohydrate response element binding protein) is a unique trigger that causes excess carbohydrates to be stored as fatty acids as body fat. The study was first published in the current issue of the American Journal of Physiology-Endocrinology and Metabolism.

The study is a continuation of a five year old discovery of the ChREBP which is a separate acting trigger for fat storage. It was originally thought that Insulin was the only fat storage system in the body previous to this discovery.

We have heard of the many benefits of eating fiber, one being it helps keeps your intestinal tract regular. Dr. Paul L. McNeil who is a cell biologist at the Medical College of Georgia reported how fiber benefits digestion and improves the health of the intestines. Mc Neil first published his study in the online August 21st edition and also will appear in the September print issue of PLoS Biology.

The roughage of the fiber increases mucus production which has been known for years. Mc Neil discovered the reason in which he says, “When you eat high-fiber foods, they bang up against the cells lining the gastrointestinal tract, rupturing their outer covering. What we are saying is this banging and tearing increases the level of lubricating mucus. It’s a good thing.”
